my sugary cravings!

   During our final Unit of Food for Thought, we discussed and analyzed the different ways food transforms during production, and reviewed real food to see if these transformations compromise texture, nutrition, and taste. In regards to taste, the Indian healing system, Ayurveda, refers to six: salty, astringent, sour, bitter, pungent, and sweet. The food transformations include whole to refined, complexity to simplicity, quality to quantity, and leaves to seeds. My job, though, is to review and compare two dishes, one homemade and one from a local cafe (My food of choice was blueberry muffins, and I compared mine to the muffins at Perkolator).
